Egg Fried Rice


•500g Thai Fragrant Rice
•2-3 Eggs
•3 tbsp of cooking oil
•½ tsp of salt
•2 tsp light soy sauce
•1 tsp sesame oil
•Chopped spring onion
•White pepper

Preparation for Boiled Rice:

1.Rinse rice in pot twice.
2.Add ½ pint of water
3.Bring rice to boil uncovered
4.When rice is boiling, turn heat to minimum.
5.Place the lid on the pot and cook for 10 mins.
6.Turn heat off and keep the lid on for 5 mins.

Fried Rice:

1.Heat 1 ½ tbsp of cooking oil in wok until very hot.
2.Stir fry egg until firm. Remove from wok.
3.Add 1 ½ tbsp of cooking oil in wok.
4.Add cooked rice then stir-fry for 2 mins.
5.Add salt, pepper, light soy sauce and sesame oil. Stir-fry for 2 mins.
6.Add egg and stir-fry for 1 min.
7.Serve hot and sprinkle with spring onion.
