200g medium rice noodles
100g raw king prawns
100g mussels (off the shell)
100g monkfish fillet (sliced)
½ onion (sliced)
½ red pepper (sliced)
½ red chilli (sliced and seeded)
1 clove of garlic (finely chopped)
1 tbsp of Jimmy’s Satay Sauce
1 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp Shaosing Wine
White pepper and sesame oil
1.Boil rice noodles in a saucepan (add 1 tsp of cooking oil) for 5mins. Drain and transfer to dish.
2.Boil broccoli (add 1 tsp of salt, 1 tsp of cooking oil) for 3mins. Drain and place broccoli around the noodles.
3.Blanch seafood for 1 min. Drain.
4.Heat 2 tbsp of cooking oil in wok.
5.Add garlic, and vegetables. Stir-fry for 1 min.
6.Add the Shaosing wine, Satay sauce, fish sauce, oyster sauce, 1tsp of salt, 1tsp sugar, and white pepper.
7.Add seafood and a cup of water. Bring to boil.
8.Thicken the sauce with cornflour (mixed with water).
9.Add a few drops of sesame oil.
10.Place the seafood on top of the rice noodles.
