Mixed Seafood with Rice Noodles in Satay Sauce

Ingredients:

•200g medium rice noodles
•100g raw king prawns
•100g mussels (off the shell)
•100g monkfish fillet (sliced)
•½ onion (sliced)
•½ red pepper (sliced)
•½ red chilli (sliced and seeded)
•200g Broccoli
•1 clove of garlic (finely chopped)
•1 tbsp of Jimmy’s Satay Sauce
•1 tbsp fish sauce
•1 tbsp oyster sauce
•1 tbsp Shaosing Wine
•White pepper and sesame oil


Preparation:

1.Boil rice noodles in a saucepan (add 1 tsp of cooking oil) for 5mins. Drain and transfer to dish.
2.Boil broccoli (add 1 tsp of salt, 1 tsp of cooking oil) for 3mins. Drain and place broccoli around the noodles.
3.Blanch seafood for 1 min. Drain.
4.Heat 2 tbsp of cooking oil in wok.
5.Add garlic, and vegetables. Stir-fry for 1 min.
6.Add the Shaosing wine, Satay sauce, fish sauce, oyster sauce, 1tsp of salt, 1tsp sugar, and white pepper.
7.Add seafood and a cup of water. Bring to boil.
8.Thicken the sauce with cornflour (mixed with water).
9.Add a few drops of sesame oil.
10.Place the seafood on top of the rice noodles.

                        Ready to Serve
