•1 ˝ tbsp of black beans
•2 cloves of garlic (finely chopped)
•3 slices of ginger, cut into strips
•Spring onion (sliced)
Preparation for black bean paste:
1.Soak black beans in warm water for 5 mins.
2.Drain and add 2 cloves of finely chopped garlic and 2 tablespoons of cooking oil.
3.Crush the black beans with a spoon until it becomes a paste.
1.Season salmon with salt, pepper and sesame oil for 20 mins.
2.Heat 2 tbsp of cooking oil.
3.Lightly coat salmon in corn flour.
4.Place salmon in wok to fry each side for approximately 5 mins. (Turn to low heat).
5.Transfer to a dish.
6.Add black bean paste into the wok.
7.Add: Shaosing wine, 1 cup of water, 1 tbsp of oyster sauce, 1 tsp of salt, 1 tsp of sugar, 1 tsp of dark soy sauce, 1 tbsp of rice vinegar, white pepper and sesame oil.
8.Add ginger and spring onion.
9.Thicken the sauce with corn flour (mixed with water).
10.Pour the sauce onto the salmon.
