Ingredients:
•Chicken breast 1 piece (approx. 200g) •˝ onion diced •˝ green or red pepper diced •1 small tin of pineapple pieces •1 egg •1 tablespoon self-raising flour •50g Potato flour
Preparation for chicken:
1.Dice chicken into small pieces. 2.Add a sprinkle of salt and pepper to season. 3.Mix 1 egg and a tablespoon of self-raising flour with chicken. 4.Put 50g of potato flour in a dish. 5.Coat the chicken in potato flour. 6.Heat about 2 inches of oil to medium heat. 7.Deep-fry each piece of chicken for approx 3 mins until crispy. 8.Drain oil.
Sweet and Sour sauce:
1.Dissolve 2 tablespoons of sugar in 200ml of water in a saucepan. 2.Add: 4 tablespoons of tomato ketchup 2 tablespoons of rice vinegar 2 tablespoons of plum sauce Bring to boil. 3.Add 1 tablespoon of corn flour in a small amount of water and stir. 4.Thicken the sauce with corn flour.
Cooking:
1.Heat 1 tablespoon of oil in a wok. 2.Add the: Onion, pineapple and pepper. Stir-fry for 1 min. 3.Add sweet and sour sauce and chicken. Mix well.
Ready to serve.
