•250g Frying Steak (sliced into strips)
•400g Fresh Broccoli (cut into small pieces)
•2 Cloves of Garlic (finely chopped)
•1 small piece of Ginger (sliced)
1.Marinate beef with 1 tsp of salt, 1 tsp of sugar, 1 tsp of Light Soy sauce, 2 tsp of cornflour, a sprinkle of white pepper and 1 tsp sesame oil. For approximately 20mins.
2.Put a pint of boiling water in a saucepan with 1 tsp of salt and 1 tbsp of cooking oil. Blanch broccoli spears for 3 mins then drain.
3.Add 2 tbsp of cooking oil in wok. Place the beef into the wok and stir-fry for 2 mins until brown.
4.Transfer beef into a dish.
5.Heat 1 tbsp of cooking oil, add: broccoli, garlic and ginger.
6.Add 2 tbsp of Shoashing wine, 3 tbsp of Oyster sauce, 1 tsp of sugar, 1tsp of salt and one cup of water.
7.Add 2 tsp of cornflour (mixed with water) to thicken the sauce.
8.Add beef, then stir-fry for 1 min.
9.Add 1 tsp of Dark Soy sauce.
Ready to serve
