•250g topside or frying steak (sliced)
•1 green or red pepper (diced)
•½ onion (diced)
•½ carrot (sliced)
•½ chilli (seeded and sliced)
•1½ tablespoon of dried fermented black bean
•2 cloves of garlic (finely chopped)
Preparation for beef:
Marinate beef with: ½ teaspoon of salt
½ teaspoon of sugar
1 teaspoon of light soy
1 teaspoon of corn flour
Sprinkle of white pepper and sesame oil.
Preparation for black bean paste:
1.Soak black beans in warm water for 5 mins.
2.Drain and add 2 cloves of finely chopped garlic and 2 tablespoons of cooking oil.
3.Crush the black beans with a spoon until it becomes a paste.
1.Heat 2 tablespoons of oil in wok.
2.Add beef and stir-fry for 2 mins until 80% cooked.
3.Transfer the beef to a dish.
4.Add black bean paste, green pepper, onion, carrot and chilli. Stir-fry for 1 min.
5.Add 1 tablespoon Shaosing cooking wine,½ teaspoon of salt, ½ teaspoon of sugar, 1 tablespoon of oyster sauce, 1 tablespoon of dark soy sauce and half a cup of water.
6.Add the beef.
7.Add a teaspoon a corn flour (mixed in with water) to thicken the sauce.
8.Add a few drops of sesame oil.
9.Ready to serve.
