•100g Chinese mixed spices
•½ cucumber (strips)
•4 Stalks of spring Onion (strips)
•Hoi Sin sauce
•24 x Crispy duck pancakes
•Yellow bean paste
1.Chop duck into half.
2.Put 2 pints of boiling water in a large pot.
3.Add Chinese mixed spices, 2 tbsp of yellow bean paste, 1 ½ tbsp of salt, 2 tbsp of sugar, 2 tbsp of oyster sauce, 2 tbsp of light soy sauce and 2 tbsp of dark soy sauce.
4.Boil the duck for 1 ½ hours in low heat. Then turn off the heat and keep the lid on for a further ½ hour.
5.Removed the duck and let it cool down for ½ an hour.
6.Pre-heat oven at 250 degrees.
7.Put a large piece of tin foil on a baking dish then roast the duck for ½ hour in the oven until crispy.
8.Put 24 pancakes in a bamboo steamer and steam for 5 mins.
9.Shred the duck with 2 forks and serve with Hoi Sin sauce, cucumber and spring onion in the pancakes.
