Duck & Pineapple with Fresh Ginger

Ingredients:

•Duck breast 1 piece (sliced)
•Fresh pineapple pieces/tinned pineapple
•˝ green pepper (diced)
•˝ onion (diced)
•Small piece of fresh ginger (sliced)
•1 clove of garlic (finely chopped)
•1 tablespoon of tomato ketchup
•1 tablespoon of rice vinegar
•1 tablespoon of plum sauce


Preparation:

1.Marinate duck meat with:
˝ teaspoon of salt
˝ teaspoon of sugar
1 teaspoon of light soy sauce
1 teaspoon of corn flour
sprinkle of white pepper
and sesame oil.

2.Heat 2 tablespoons of cooking oil in wok.
3.Brown the duck meat in wok for 1 minute.
4.Transfer duck meat to a dish.
5.Add chopped garlic, onion, pepper and pineapple into the wok.
6.Add 100ml of water, tomato ketchup, rice vinegar and plum sauce. Bring to boil.
7.Add duck meat and cook for 1 minute.
8.Add 1 teaspoon of cornflour (mixed with water) to thicken the sauce.
9.Add a few drops of Dark Soy Sauce and Sesame oil.

Ready to Serve
